Broccoli microgreens have a mild cabbage flavor that develops into a broccoli taste as it matures. Broccoli is very high in vitamins A, B, C, E, and K, as well as calcium, iron, copper, zinc, and magnesium. Broccoli microgreens are also an amazing source of a very special natural compound called sulphoraphane which is a key factor in a lot of the health benefits mentioned below. Sulphoraphane is found in vegetables like broccoli and Brussel sprouts, but it's at its highest concentration in microgreens. Here are a few of the reasons we like to call broccoli microgreens nature's daily vitamin.
Cancer fighting properties- Sulphoraphane can lower the number and size of some cancer cells such as breast cancer. It also promotes the action of antioxidants and enzymes that can detoxify our bodies and remove carcinogenic elements.
Cardiovascular support- Sulforaphane helps calm down inflammation in the blood vessels, especially in the areas where clogs (made of fat and immune cells) usually form. These clogs can block blood flow. Sulforaphane does this by turning on a protein called Nrf2, which helps protect the body from inflammation.
Helps control blood sugar-The fiber in broccoli microgreens helps slow down how fast your body takes in sugar from food. This means sugar enters your blood more slowly, which helps avoid a big spike in blood sugar and insulin. Those spikes can lead to low blood sugar later and make you feel super hungry. On top of that, sulforaphane has also been shown to help lower blood sugar, especially for people with type 2 diabetes.
Prevent aging-Sulforaphane works deep in your cells by turning on special proteins called HSP27, which help protect your cells from aging. These proteins also help block damage from UV rays (like from the sun and even the curing lights for gel polish), which can make your skin age faster. Sulforaphane is also an antioxidant, meaning it helps get rid of harmful molecules called free radicals. These can damage your DNA and cause something called oxidative stress, which is linked to many long-term health problems.
Improve Brain function- Sulforaphane, the antioxidant in broccoli microgreens, can help protect nerve cells from damage and help them heal faster. Taking vitamin E along with broccoli microgreens might make this effect even stronger.
Did you know that broccoli microgreens contain up to 100 times the sulphoraphane as a head of broccoli. Which means all you have to do is add a handful of microgreens to a salad, sandwich, or blend them up in a smoothie and you get all these amazing benefits. The best part? Kids love them.
